Smoky Roasted Baby Potatoes and Fennel

Here's another of one of my children's frequently-requested favorites.

AND another "Tofu-Mom" version of a Paula Deen recipe (which you can find HERE, just to give her credit for the original).
AND, best of all? (maybe) another entry in this month's frantic Month Of Vegan Blogging!

First, just an ingredient note: You'll notice I've used Bacon Salt in this recipe, (and in lots of Paula "makeovers) instead of her famous and ubiquitous bacon-bacon-bacon. I loved one of yesterday's comments, "she must have her cardiologist on speed dial"!!
Anyway, I've never had "real" bacon, but I love smoky flavors even in vegetarian cooking, and if you're a fan,
(or just miss bacon) this Bacon-Salt stuff is really crazy good!!
It's a smoked seasoning product that, not to fear, is
entirely vegetarian, (and the "Peppered" version is vegan).
You can find it online and in most supermarkets, and it adds a really great smoky flavor to lots of foods (and despite the "salt" in the name, is low in sodium! (I swear I don't work for the company!!) If you can't find it, smoked salt or liquid smoke works equally well here, though use less. But get used to it, 'cause y'all are gonna see it a lot in future recipes!

OK, so back to the recipe; my folks just harvested their potatoes last weekend and gave me a big ol' bunch of wonderful little baby 'taters!! This was the first dish that came to mind, and the perfect thing for a cool fall evening.

Smoky Roasted Baby Potatoes and Fennel

3 pounds baby reds or fingerling potatoes, halved lengthwise or left whole if really small
2 fennel bulbs, thinly sliced
1 onion, thinly sliced
2 tsp. Bacon Salt (or appropriate amount smoke flavoring of your choice)
2 tsp. olive oil
1 Tbsp. lemon juice
Kosher salt and freshly ground black pepper

Preheat oven to 450 degrees F.
Line a rimmed baking sheet with heavy-duty aluminum foil.

In a large bowl, combine potatoes, fennel, and onion. Drizzle olive oil and lemon juice over vegetables and sprinkle with Bacon Salt, salt and pepper to taste, tossing gently to coat.

Spoon mixture in an even layer onto prepared baking sheet. Roast for 40 minutes, stirring occasionally or until potatoes are browned and tender.

Simple and sooooooo good! (Have I said that before? Probably.)

Rosemary Roasted Potatoes with Smoked Salt

OK, this picture disappoints me because these just sorta look brown and dried out, but they weren't really.

They were little Yukon Gold potatoes, roasted 'till golden with olive oil and big sprigs of rosemary from my backyard. Crisp on the outside, soft on the inside - heavenly!

But the main reason these are special? They were the perfect place to try out the new Alder Smoked Sea Salt I got for Christmas. Oh my gosh, just a few flakes added an undertone of woody alder-smoke, almost as if I'd roasted these on the campfire!

Sorry, no precise recipe, I just wanted to share, since they were so insanely, addictively good!! If you ever get a chance to try Smoked Salt, ...WOW! It's good stuff!
And even if you don't have it, go make some roasted potatoes anyway. They're good on their own too!
So, any other ideas on how I could use the Smoked Salt? It's so freakin' good I just want to lick the bottle. Which wouldn't be a great idea, being that it's salt and all...
The recipe pamphlet included many nice recipes for fish, BBQ, eggs, hamburgers... Hmmm, I think I can get more creative than that!

Bumper Stickers and BBQ Tofu for Supper

First news of the day: I added a new bumper sticker to my Mom-van and just have to show it off. (The Vegetarian one..).
This event is impressive in itself because I'm actually not a 'bumper sticker' fan... but someone gave me "Who Are These Kids..." a year or two back and EVERYONE said it was so "me" that I just had to put on the van's pristine, unadorned backside. It gets great comments absolutely all the time (which I find weird since I never notice, much less comment on, other people's adesivo com frases humorĂ­sticas... but I digress).
Anyway, my kids found and LOVED the new "Vegetarian" bumper sticker especially for it's 'sprouting' reference, ('cause I always refer to them as my "Sprouts" of course). I figure a little PR for a vegetarian lifestyle is a good thing, but that's the last one - no more humorous adhesive on my hiney!

Next, a simple but most excellent supper made by myself, and my friend Froggy-boy. We both thought it was worthy of a passing mention here just for it's simplicity and delicious-ness alone.
  • Kale with roasted red peppers and sesame seeds. (No recipe, that's all there was to it.)
  • Baked Tofu with BBQ sauce. (Again, no recipe, just slabs of tofu, baked with sauce - sooo yummy!)
  • Garlic and Herb Oven-Roasted Potatoes (Recipe below)


Garlic and Herb Roasted Potatoes

6 Yukon Gold Potatoes
1/2 cup extra virgin olive oil
juice of 1 lemon
1/4 tsp. finely grated lemon peel
2 garlic cloves (You KNOW I used more than this!)
large handful fresh basil leaves
2 - 3 sprigs fresh thyme and sage
1 tsp. onion salt
Seasoning Salt (I use Johnny's 'cause it's made nearby in Tacoma, no MSG and way cheap) and pepper to taste

Cube potatoes. Place in roasting pan or shallow rectangular baking dish.
Put all other ingredients in food processor and blend until liquefied. It will be thick and green and garlick-y.
Pour about 3/4 of the mixture over the potatoes and mix well. (I use my hands).
Bake at 450 degrees for 45 min. or until starting to brown and crisp. Stir several times.
Pour remaining seasoning mixture over potatoes, toss well and serve. Yummmmmm.

There were no leftovers.
